Cauliflower is great for digestive health as it contains dietary fibre and is packed with antioxidants and phytonutrients. Serves 4
1 large cauliflower cut into florets
4 tbsp olive oil
Zest of 1 lemon
Pinch of chilli flakes (optional)
1 tsp mustard seeds
50g flaked almonds
Juice of 1 lemon
- Preheat the oven to 180 C/ Gas 4. Spread the cauliflower florets in a large roasting tin and drizzle with the olive oil. Season with Salt and Pepper and cook in the oven for 10 minutes.
- Remove from the oven. Mix in the lemon zest and chili flakes if using. Sprinkle over the mustard seeds and flaked almonds. Cook for a further 10-12 minutes until the cauliflower is turning slightly brown in places.
- Place on a serving platter and drizzle with the lemon juice.
