Colourful and bursting with vitamins, minerals and powerful antioxidants, this salad will make you smile.
Serves 2
120g spinach leaves and rocket leaves mixed
4 medium beetroots cooked and sliced
2 oranges peeled and sliced
¼ cup chopped walnuts
2 tbsp feta cheese crumbled
Dressing:
3 tbsp olive oil
2 tbsp orange juice
1 tbsp red wine vinegar
1 tbsp Dijon mustard
Salt & Pepper
- Whisk all the dressing ingredients together.
- Assemble the salad leaves on a serving platter or shallow salad bowl. Then place the orange slices and beetroot slices on top.
- Sprinkle the crumbled feta cheese and walnuts and drizzle the dressing over everything.
- Enjoy cold or at room temperature.
