Colourful and bursting with vitamins, minerals and powerful antioxidants, this salad will make you smile.

Serves 2 

120g spinach leaves and rocket leaves mixed

4 medium beetroots cooked and sliced

2 oranges peeled and sliced 

¼ cup chopped walnuts

2 tbsp feta cheese crumbled  

Dressing: 

3 tbsp olive oil 

2 tbsp orange juice 

1 tbsp red wine vinegar 

1 tbsp Dijon mustard

Salt & Pepper

  1. Whisk all the dressing ingredients together.
  2. Assemble the salad leaves on a serving platter or shallow salad bowl. Then place the orange slices and beetroot slices on top.
  3. Sprinkle the crumbled feta cheese and walnuts and drizzle the dressing over everything.
  4. Enjoy cold or at room temperature.
